Description

This decadent keto lava cake is rich, chocolatey, and features a gooey center while being low in carbs!


Ingredients

Scale
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/2 cup erythritol
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, melt the butter and stir in the cocoa powder until combined.
  3. Add the erythritol, almond flour, eggs, vanilla extract, and salt and mix until smooth.
  4. Grease ramekins and fill them with the batter.
  5. Bake for 12-15 minutes or until the edges are set, but the center is still soft.
  6. Let cool for a minute, then invert onto plates and serve warm.

Notes

  • Make sure not to overbake for that gooey center!
  • Serve with a dollop of whipped cream or berries on top.
  • This can be made ahead of time and stored in the refrigerator.
