Description
This decadent keto lava cake is rich, chocolatey, and features a gooey center while being low in carbs!
Ingredients

- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond flour
- 1/2 cup erythritol
- 1/2 cup unsalted butter
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, melt the butter and stir in the cocoa powder until combined.
- Add the erythritol, almond flour, eggs, vanilla extract, and salt and mix until smooth.
- Grease ramekins and fill them with the batter.
- Bake for 12-15 minutes or until the edges are set, but the center is still soft.
- Let cool for a minute, then invert onto plates and serve warm.
Notes
- Make sure not to overbake for that gooey center!
- Serve with a dollop of whipped cream or berries on top.
- This can be made ahead of time and stored in the refrigerator.
