- 1 pound chicken breasts, diced
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 3 cups chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon thyme
- 1 refrigerated pie crust
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in onions, carrots, peas, and potatoes.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream, salt, pepper, and thyme; stir well.
- Preheat oven to 425°F (220°C).
- Roll out pie crust and place over skillet, sealing the edges.
- Bake in the oven for 25-30 minutes until the crust is golden brown.

- This dish is best served hot.
- You can substitute turkey for chicken if desired.
