Description

A comforting skillet chicken pot pie made with tender chicken, vegetables, and a flaky crust.


Ingredients

  • 1 pound chicken breasts, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon thyme
  • 1 refrigerated pie crust

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onions, carrots, peas, and potatoes.
  4. Pour in chicken broth and bring to a simmer.
  5. Add heavy cream, salt, pepper, and thyme; stir well.
  6. Preheat oven to 425°F (220°C).
  7. Roll out pie crust and place over skillet, sealing the edges.
  8. Bake in the oven for 25-30 minutes until the crust is golden brown.
