A hearty and flavorful sausage vegetable soup that is perfect for any occasion.
Ingredients

- 1 pound Italian sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup green beans, trimmed and cut
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat. Drain any excess fat.
- Add onion and garlic, cooking until softened.
- Add carrots and celery, and continue to cook for another 5 minutes.
- Stir in diced tomatoes, vegetable broth, green beans, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Season with salt and pepper to taste before serving.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Feel free to add other vegetables such as zucchini or spinach.
