Description

A hearty and flavorful sausage vegetable soup that is perfect for any occasion.


Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat. Drain any excess fat.
  2. Add onion and garlic, cooking until softened.
  3. Add carrots and celery, and continue to cook for another 5 minutes.
  4. Stir in diced tomatoes, vegetable broth, green beans, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables such as zucchini or spinach.
