Ingredients

  • 1 pound pork tenderloin
  • 1 cup blueberries
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season pork tenderloin with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat and sear the pork on all sides.
  4. Transfer the pork to a baking dish and roast in the oven until internal temperature reaches 145°F (63°C), about 20-25 minutes.
  5. Meanwhile, in the same skillet, combine blueberries, honey, balsamic vinegar, Dijon mustard, and garlic. Cook until blueberries burst and the sauce thickens.
  6. Once the pork is cooked, let it rest for 5 minutes before slicing.
  7. Serve the sliced pork topped with blueberry sauce.
