- 1 pound pork tenderloin
- 1 cup blueberries
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Season pork tenderloin with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and sear the pork on all sides.
- Transfer the pork to a baking dish and roast in the oven until internal temperature reaches 145°F (63°C), about 20-25 minutes.
- Meanwhile, in the same skillet, combine blueberries, honey, balsamic vinegar, Dijon mustard, and garlic. Cook until blueberries burst and the sauce thickens.
- Once the pork is cooked, let it rest for 5 minutes before slicing.
- Serve the sliced pork topped with blueberry sauce.
