Description

A delicious one-skillet dish featuring salmon cooked in a creamy spinach and artichoke sauce.


Ingredients

  • 4 fillets salmon
  • 1 cup spinach
  • 1 cup artichoke hearts
  • 1 cup heavy cream
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon fillets with salt and pepper.
  3. Add salmon to the skillet and cook for 4-5 minutes on each side until fully cooked.
  4. Remove salmon and set aside.
  5. In the same skillet, add garlic and sauté until fragrant.
  6. Add artichoke hearts and spinach, cooking until spinach is wilted.
  7. Stir in heavy cream, lemon juice, and red pepper flakes; simmer until thickened.
  8. Return the salmon to the skillet and coat with the sauce.
  9. Garnish with additional spinach if desired and serve.

  • For a lighter version, you can use Greek yogurt instead of heavy cream.
