- 4 fillets salmon
- 1 cup spinach
- 1 cup artichoke hearts
- 1 cup heavy cream
- 1 tablespoon garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Season salmon fillets with salt and pepper.
- Add salmon to the skillet and cook for 4-5 minutes on each side until fully cooked.
- Remove salmon and set aside.
- In the same skillet, add garlic and sauté until fragrant.
- Add artichoke hearts and spinach, cooking until spinach is wilted.
- Stir in heavy cream, lemon juice, and red pepper flakes; simmer until thickened.
- Return the salmon to the skillet and coat with the sauce.
- Garnish with additional spinach if desired and serve.
Notes
- This dish pairs well with rice or quinoa.
- For a lighter version, you can use Greek yogurt instead of heavy cream.
