Ingredients

- 1 cup almond flour
- 1/4 cup melted butter
- 2 tablespoons erythritol
- 8 ounces cream cheese, softened
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, chopped
- 2 tablespoons sugar-free strawberry preserve
Instructions
- In a mixing bowl, combine almond flour, melted butter, and erythritol. Mix until well combined.
- Press the mixture into the bottom of mini cheesecake molds to form the crust.
- In another bowl, beat the cream cheese until smooth. Add heavy cream, vanilla extract, and continue beating until creamy.
- Fold in chopped strawberries and mix gently.
- Pour the cream cheese mixture over the crust in the molds.
- Refrigerate for at least 4 hours until set.
- Top with sugar-free strawberry preserve before serving.
Notes
- These cheesecakes can be made a day in advance and stored in the fridge.
- Substitute erythritol with your preferred sweetener if desired.
