Delicious No Bake Mini Low Carb Keto Strawberry Cheesecakes that are perfect for a guilt-free treat!


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup melted butter
  • 2 tablespoons erythritol
  • 8 ounces cream cheese, softened
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, chopped
  • 2 tablespoons sugar-free strawberry preserve

Instructions

  1. In a mixing bowl, combine almond flour, melted butter, and erythritol. Mix until well combined.
  2. Press the mixture into the bottom of mini cheesecake molds to form the crust.
  3. In another bowl, beat the cream cheese until smooth. Add heavy cream, vanilla extract, and continue beating until creamy.
  4. Fold in chopped strawberries and mix gently.
  5. Pour the cream cheese mixture over the crust in the molds.
  6. Refrigerate for at least 4 hours until set.
  7. Top with sugar-free strawberry preserve before serving.
