Description

This Mexican Cornbread Casserole is a delicious and hearty dish perfect for any gathering. It combines cornbread with a flavorful mixture of ground beef, beans, and salsa.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 2 cups cornbread mix
  • 1 cup milk
  • 2 large eggs
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain the excess fat.
  3. Add in the black beans, salsa, and chili powder. Stir to combine and cook for an additional 5 minutes.
  4. In a separate bowl, mix together the cornbread mix, milk, and eggs until smooth.
  5. In a greased baking dish, spread the beef mixture evenly.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle the shredded cheese on top.
  8. Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through.
