- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 teaspoon chili powder
- 2 cups cornbread mix
- 1 cup milk
- 2 large eggs
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain the excess fat.
- Add in the black beans, salsa, and chili powder. Stir to combine and cook for an additional 5 minutes.
- In a separate bowl, mix together the cornbread mix, milk, and eggs until smooth.
- In a greased baking dish, spread the beef mixture evenly.
- Pour the cornbread batter over the beef mixture.
- Sprinkle the shredded cheese on top.
- Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through.
- Let it cool for a few minutes before serving.
