Enjoy a delicious and healthy twist on grilled cheese with this Mediterranean Keto Zucchini-Crusted version.


Ingredients

  • 2 cups grated zucchini
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices cheese (your choice)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place grated zucchini in a clean towel and squeeze out excess moisture.
  3. In a bowl, mix zucchini, mozzarella, Parmesan, eggs, garlic powder, oregano, salt, and pepper.
  4. Spread the mixture onto a parchment-lined baking sheet to form two rectangular crusts.
  5. Bake for 20-25 minutes or until golden brown.
  6. Remove from oven and layer cheese slices on one crust, then place the second crust on top.
  7. In a skillet, heat olive oil over medium heat and carefully transfer the sandwich.
  8. Cook until each side is golden and the cheese is melted.
