- 2 cups grated zucchini
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices cheese (your choice)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Place grated zucchini in a clean towel and squeeze out excess moisture.
- In a bowl, mix zucchini, mozzarella, Parmesan, eggs, garlic powder, oregano, salt, and pepper.
- Spread the mixture onto a parchment-lined baking sheet to form two rectangular crusts.
- Bake for 20-25 minutes or until golden brown.
- Remove from oven and layer cheese slices on one crust, then place the second crust on top.
- In a skillet, heat olive oil over medium heat and carefully transfer the sandwich.
- Cook until each side is golden and the cheese is melted.
