Description

Delicious and healthy Low Carb Taco Cups are perfect for a quick meal or snack.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup lettuce, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 12 mini bell peppers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water; simmer for 5 minutes.
  4. Cut mini bell peppers in half lengthwise and remove seeds.
  5. Place pepper halves on a baking sheet.
  6. Fill each pepper with seasoned beef and top with cheese.
  7. Bake for 15 minutes or until the cheese is bubbly.
  8. Top with lettuce, tomatoes, and sour cream before serving.
