Description
A delicious and healthy alternative to traditional potato salad, made with cauliflower instead of potatoes.
Ingredients

- 1 head cauliflower, chopped
- 1/2 cup mayonnaise
- 1/4 cup dijon mustard
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup pickles, chopped
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Steam the chopped cauliflower until tender, about 5-7 minutes.
- In a large bowl, mix together the mayonnaise, dijon mustard, apple cider vinegar, salt, and pepper.
- Add the steamed cauliflower, celery, red onion, and pickles to the bowl and mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For extra flavor, add fresh herbs like dill or chives.
- Can be stored in the refrigerator for up to 3 days.
