- 1 cup pecans
- 1 cup sunflower seeds
- 1 cup shredded unsweetened coconut
- 1/2 cup chia seeds
- 1/4 cup erythritol
- 1/2 cup coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 325°F (163°C).
- In a large bowl, combine the almonds, pecans, sunflower seeds, coconut, chia seeds, erythritol, cinnamon, and salt.
- In a small saucepan, melt the coconut oil and stir in the vanilla extract.
- Pour the melted coconut oil over the dry ingredients and mix well.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through until the granola is golden brown.
- Let it cool completely before storing in an airtight container.
