Ingredients

  • 1 cup almonds
  • 1 cup pecans
  • 1 cup sunflower seeds
  • 1 cup shredded unsweetened coconut
  • 1/2 cup chia seeds
  • 1/4 cup erythritol
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large bowl, combine the almonds, pecans, sunflower seeds, coconut, chia seeds, erythritol, cinnamon, and salt.
  3. In a small saucepan, melt the coconut oil and stir in the vanilla extract.
  4. Pour the melted coconut oil over the dry ingredients and mix well.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through until the granola is golden brown.
  7. Let it cool completely before storing in an airtight container.
