Description

A delicious and easy-to-make low carb breakfast casserole perfect for a keto diet.


Ingredients

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 cup spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
  3. In a mixing bowl, whisk together eggs, heavy cream, garlic powder, onion powder, salt, and black pepper.
  4. Add the cooked sausage, spinach, and half of the cheese to the egg mixture. Stir to combine.
  5. Pour the mixture into a greased baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes or until the casserole is set and golden brown.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • This casserole can be prepared in advance and stored in the refrigerator. Reheat before serving.
