A delicious low-carb twist on traditional egg rolls without the wrapper!
Ingredients

- 1 pound ground pork
- 1 tablespoon sesame oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 pound coleslaw mix
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 2 green onions, sliced
Instructions
- In a large skillet, heat the sesame oil over medium heat.
- Add the ground pork and cook until browned.
- Stir in the onion and garlic, cooking until softened.
- Add the coleslaw mix, soy sauce, rice vinegar, and ginger.
- Cook until the coleslaw is tender, about 5-7 minutes.
- Top with sliced green onions and serve hot.
Notes
- For added heat, consider adding sriracha or red pepper flakes.
- Feel free to substitute ground pork with ground chicken or turkey.
