- 1/2 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 cup fresh cherries, pitted and halved

Instructions
- In a mixing bowl, combine the softened cream cheese and powdered erythritol, mixing until smooth.
- Add the vanilla extract and heavy cream, then continue to mix until fluffy.
- In another bowl, mix the cherries with lemon juice and salt.
- Layer the cheesecake mixture and cherry mixture in serving cups.
- Chill for at least 2 hours before serving.
