- 1 head cauliflower
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the cauliflower into florets and steam until tender.
- In a large mixing bowl, mash the steamed cauliflower.
- Add sour cream, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper. Mix until well combined.
- Transfer the mixture to a baking dish and top with additional cheese and bacon, if desired.
- Bake in the oven for 20-25 minutes or until golden and bubbly.
- Garnish with extra green onions before serving.
