Description

A delicious low-carb taco casserole that is perfect for a keto diet. Layers of seasoned ground beef, cheese, and vegetables make this a satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup bell pepper, diced
  • 1/2 cup sour cream
  • 1/4 cup sliced olives
  • 2 cups shredded lettuce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion until browned. Add in the taco seasoning and mix well.
  3. In a casserole dish, layer the ground beef mixture, cherry tomatoes, bell pepper, and olives.
  4. Top with shredded cheddar cheese and bake for 20-25 minutes, until the cheese is melted and bubbly.
  5. Remove from the oven and let cool for a few minutes. Serve topped with sour cream and shredded lettuce.

Notes

  • Can substitute ground turkey for beef if desired.
  • For added spice, include jalapeños.
