- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup bell pepper, diced
- 1/2 cup sour cream
- 1/4 cup sliced olives
- 2 cups shredded lettuce
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion until browned. Add in the taco seasoning and mix well.
- In a casserole dish, layer the ground beef mixture, cherry tomatoes, bell pepper, and olives.
- Top with shredded cheddar cheese and bake for 20-25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Serve topped with sour cream and shredded lettuce.
Notes
- Can substitute ground turkey for beef if desired.
- For added spice, include jalapeños.
