- 1 cup cauliflower rice
- 4 sheets nori seaweed
- 1/2 pound sashimi-grade salmon
- 1/2 avocado, sliced
- 1/2 cucumber, julienned
- 2 tablespoons cream cheese
- 1 tablespoon soy sauce or tamari
Instructions
- Prepare cauliflower rice by pulsing cauliflower florets in a food processor until rice-sized.
- Lay a sheet of nori on a bamboo mat or clean surface.
- Spread a layer of cauliflower rice evenly over the nori, leaving a small border at the top.
- Add slices of salmon, avocado, cucumber, and dollops of cream cheese on top of the rice.
- Using the mat, carefully roll the sushi tightly from the bottom up, sealing the edge with a little water.
- Repeat with remaining ingredients.
- Slice the rolls into pieces and serve with soy sauce or tamari.
