Description

Delicious and low-carb sushi wrapped in healthy ingredients, perfect for a keto diet.


Ingredients

Scale
  • 1 cup cauliflower rice
  • 4 sheets nori seaweed
  • 1/2 pound sashimi-grade salmon
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 2 tablespoons cream cheese
  • 1 tablespoon soy sauce or tamari

Instructions

  1. Prepare cauliflower rice by pulsing cauliflower florets in a food processor until rice-sized.
  2. Lay a sheet of nori on a bamboo mat or clean surface.
  3. Spread a layer of cauliflower rice evenly over the nori, leaving a small border at the top.
  4. Add slices of salmon, avocado, cucumber, and dollops of cream cheese on top of the rice.
  5. Using the mat, carefully roll the sushi tightly from the bottom up, sealing the edge with a little water.
  6. Repeat with remaining ingredients.
  7. Slice the rolls into pieces and serve with soy sauce or tamari.
