Delicious Keto Stuffed Peppers that are both healthy and satisfying.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cauliflower rice
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground beef with onions and garlic.
  4. Add cauliflower rice, diced tomatoes, and seasonings, stir to combine.
  5. Stuff the mixture into bell peppers, top with shredded cheese.
  6. Place peppers in a baking dish, cover with foil, and bake for 30 minutes.
  7. Remove foil and bake an additional 10 minutes until cheese is bubbly.
  8. Serve hot.
