Delicious and healthy Keto Strawberry Rhubarb Bars that are perfect for a low-carb dessert.


Ingredients

Scale
  • 2 cups almond flour
  • 1/4 cup erythritol
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup strawberries, chopped
  • 1 cup rhubarb, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together almond flour, erythritol, melted butter, vanilla extract, and salt.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In another bowl, mix strawberries, rhubarb, and lemon juice, and pour over the crust.
  5. Bake for 25-30 minutes until set and lightly golden.
  6. Let cool before cutting into bars.
