Ingredients

- 2 cups almond flour
- 1/4 cup erythritol
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 cup strawberries, chopped
- 1 cup rhubarb, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together almond flour, erythritol, melted butter, vanilla extract, and salt.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, mix strawberries, rhubarb, and lemon juice, and pour over the crust.
- Bake for 25-30 minutes until set and lightly golden.
- Let cool before cutting into bars.
Notes
- Store in the refrigerator.
- Can be served with whipped cream for extra flavor.
- Adjust erythritol to taste if needed.
