Description

Delicious and chewy Keto Snickerdoodles that are low in carbs and perfect for a healthy treat.


Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and erythritol until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the almond flour, baking soda, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Roll the dough into balls and place on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly and sprinkle with additional cinnamon.
  8. Bake for 10-12 minutes or until golden.
  9. Let cool before serving.
