Ingredients

- 2 cups almond flour
- 1/2 cup erythritol
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and erythritol until light and fluffy.
- Add in the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the almond flour, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet ingredients.
- Roll the dough into balls and place on a baking sheet lined with parchment paper.
- Flatten each ball slightly and sprinkle with additional cinnamon.
- Bake for 10-12 minutes or until golden.
- Let cool before serving.
