Description

A delicious and low-carb version of the classic Pad Thai, made with shrimp and keto-friendly ingredients.


Ingredients

  • 8 ounces shirataki noodles
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons peanut butter
  • 2 tablespoons erythritol (or sweetener of choice)
  • 2 green onions, chopped
  • 1 egg, beaten
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup bean sprouts
  • 1/4 cup crushed peanuts

Instructions

  1. Rinse the shirataki noodles and set aside.
  2. In a large pan, heat sesame oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink, then push to the side of the pan.
  4. Pour the beaten egg into the pan and scramble.
  5. Add shirataki noodles, fish sauce, soy sauce, lime juice, peanut butter, erythritol, and mix well.
  6. Stir in green onions and bean sprouts.
  7. Serve topped with crushed peanuts.

Notes

  • For extra flavor, you can add more lime juice or chili flakes.
  • Ensure the noodles are well-drained to avoid excess moisture.
