Description

A delicious low-carb take on the classic shepherd’s pie, made with ground meat and a cauliflower topping.


Ingredients

  • 1 pound ground beef
  • 1 cup cauliflower, riced
  • 1 cup green beans, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat, adding onion and garlic until softened.
  3. Stir in the green beans, paprika, salt, and pepper.
  4. Add beef broth and bring to a simmer.
  5. Transfer the meat mixture to a baking dish.
  6. In a separate pot, boil riced cauliflower until tender and mash.
  7. Spread the mashed cauliflower over the meat mixture.
  8. Sprinkle cheese on top.
  9. Bake for 20-25 minutes until cheese is bubbly.

Notes

  • This dish is best served fresh but can be stored in the fridge for up to 3 days.
  • For added flavor, you can mix in some herbs like thyme or rosemary.
