A delicious low-carb take on the classic shepherd’s pie, made with ground meat and a cauliflower topping.
Ingredients

- 1 pound ground beef
- 1 cup cauliflower, riced
- 1 cup green beans, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup beef broth
- 1 cup shredded cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat, adding onion and garlic until softened.
- Stir in the green beans, paprika, salt, and pepper.
- Add beef broth and bring to a simmer.
- Transfer the meat mixture to a baking dish.
- In a separate pot, boil riced cauliflower until tender and mash.
- Spread the mashed cauliflower over the meat mixture.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until cheese is bubbly.
Notes
- This dish is best served fresh but can be stored in the fridge for up to 3 days.
- For added flavor, you can mix in some herbs like thyme or rosemary.
