Description

These Keto Shepherd’s Pie Meatballs are a delicious and low-carb twist on the classic dish, featuring savory meatballs topped with a creamy cauliflower mash.


Ingredients

  • 1 pound ground beef
  • 1 cup cauliflower florets
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 cup diced mushrooms
  • 1 cup frozen peas
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, egg, Parmesan cheese, garlic powder, onion powder, and thyme. Form mixture into meatballs and place on a baking sheet.
  3. Bake meatballs for 20-25 minutes or until cooked through.
  4. Meanwhile, steam cauliflower florets until tender. Drain and blend with heavy cream until smooth.
  5. In a skillet, heat olive oil over medium heat. Add mushrooms and peas, and sauté until tender.
  6. Add beef broth to the skillet, and bring to a simmer.
  7. Once meatballs are cooked, add to the skillet and cook for a few minutes to combine the flavors.
  8. Serve meatballs topped with cauliflower mash.

Notes

  • For a spicier version, add some crushed red pepper flakes to the meat mixture.
  • You can substitute ground turkey or chicken for a lighter option.
