These Keto Shepherd’s Pie Meatballs are a delicious and low-carb twist on the classic dish, featuring savory meatballs topped with a creamy cauliflower mash.

- 1 pound ground beef
- 1 cup cauliflower florets
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 cup diced mushrooms
- 1 cup frozen peas
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, egg, Parmesan cheese, garlic powder, onion powder, and thyme. Form mixture into meatballs and place on a baking sheet.
- Bake meatballs for 20-25 minutes or until cooked through.
- Meanwhile, steam cauliflower florets until tender. Drain and blend with heavy cream until smooth.
- In a skillet, heat olive oil over medium heat. Add mushrooms and peas, and sauté until tender.
- Add beef broth to the skillet, and bring to a simmer.
- Once meatballs are cooked, add to the skillet and cook for a few minutes to combine the flavors.
- Serve meatballs topped with cauliflower mash.
Notes
- For a spicier version, add some crushed red pepper flakes to the meat mixture.
- You can substitute ground turkey or chicken for a lighter option.
