Ingredients

  • 1/4 cup butter, melted
  • 3 tablespoons erythritol
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup raspberries
  • 2 ounces cream cheese, softened
  • 2 tablespoons powdered erythritol

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, melted butter, and erythritol. Press the mixture into a pie dish to form the crust.
  3. Bake for 10 minutes, then let it cool.
  4. In a separate bowl, whip the heavy cream until soft peaks form.
  5. In another bowl, beat the cream cheese and powdered erythritol until smooth.
  6. Fold the whipped cream into the cream cheese mixture until combined.
  7. Spread the filling over the cooled crust and top with raspberries.
  8. Refrigerate for at least 2 hours before serving.
