- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 lemon, quartered
- 4 sprigs fresh rosemary
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the olive oil all over the chicken and season generously with salt, pepper, garlic powder, onion powder, thyme, and paprika.
- Stuff the cavity of the chicken with the lemon quarters and fresh rosemary.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving.
