- 2 pounds pork loin
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 lemon (zested and juiced)
- 1 cup mayonnaise
- 2 cloves garlic (minced)
- 1 tablespoon Dijon mustard
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Rub the mixture all over the pork loin.
- Place the pork loin in a roasting pan.
- Roast in the oven for about 60-70 minutes, or until the internal temperature reaches 145°F (63°C).
- While pork is roasting, prepare the lemon aioli by mixing mayonnaise, lemon juice, lemon zest, minced garlic, and Dijon mustard in a bowl.
- Once pork is finished, let it rest for 10 minutes before slicing.
- Serve with lemon aioli on the side.

- For best flavor, marinate the pork loin in the spice mix for a few hours before cooking.
