Ingredients

  • 2 pounds pork loin
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 lemon (zested and juiced)
  • 1 cup mayonnaise
  • 2 cloves garlic (minced)
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Rub the mixture all over the pork loin.
  4. Place the pork loin in a roasting pan.
  5. Roast in the oven for about 60-70 minutes, or until the internal temperature reaches 145°F (63°C).
  6. While pork is roasting, prepare the lemon aioli by mixing mayonnaise, lemon juice, lemon zest, minced garlic, and Dijon mustard in a bowl.
  7. Once pork is finished, let it rest for 10 minutes before slicing.
  8. Serve with lemon aioli on the side.
