Crispy and delicious, these Keto Macadamia Biscotti are a perfect low-carb treat.


Ingredients

  • 2 cups almond flour
  • 1 cup macadamia nuts, chopped
  • 1/2 cup erythritol
  • 1/4 cup coconut oil, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix almond flour, erythritol, baking powder, and salt.
  3. Add melted coconut oil, eggs, and vanilla extract; mix until combined.
  4. Fold in chopped macadamia nuts.
  5. Form the dough into a log shape on a baking sheet.
  6. Bake for 25-30 minutes until golden brown.
  7. Let cool slightly, then slice into biscotti shapes.
  8. Return to the oven and bake for an additional 10-15 minutes.
