Ingredients

- 2 cups almond flour
- 1 cup macadamia nuts, chopped
- 1/2 cup erythritol
- 1/4 cup coconut oil, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix almond flour, erythritol, baking powder, and salt.
- Add melted coconut oil, eggs, and vanilla extract; mix until combined.
- Fold in chopped macadamia nuts.
- Form the dough into a log shape on a baking sheet.
- Bake for 25-30 minutes until golden brown.
- Let cool slightly, then slice into biscotti shapes.
- Return to the oven and bake for an additional 10-15 minutes.
