Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 4 cups chicken broth
- 1 cup celery, chopped
- 1 cup carrots, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat and add onion and garlic. Sauté until softened.
- Add ground turkey to the pot and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Add celery, carrots, thyme, and rosemary. Reduce heat and simmer for about 20 minutes.
- Stir in spinach and cook for an additional 5 minutes.
- Season with salt and pepper before serving.
Notes
- For added flavor, you can include a splash of lemon juice before serving.
- This soup can be stored in the refrigerator for up to 4 days.
- Freeze leftovers for a quick meal later.
