Description
A low-carb version of traditional ladyfingers, perfect for a variety of keto desserts.
Ingredients

- 3 large eggs, separated
- 1/4 cup erythritol (or other keto-friendly sweetener)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup almond flour
- 1/4 teaspoon baking powder
- 1 pinch salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat the egg whites until stiff peaks form.
- In another bowl, mix the egg yolks with erythritol, vanilla, and almond extract until creamy.
- Gently fold in the almond flour, baking powder, and salt into the egg yolk mixture.
- Carefully fold the beaten egg whites into the yolk mixture until just combined.
- Spoon the batter onto the prepared baking sheet in finger shapes.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool before serving.
Notes
- These keto ladyfingers can be used in tiramisu or as a dessert on their own.
- Store in an airtight container at room temperature for up to 3 days.
