Description

A low-carb version of traditional ladyfingers, perfect for a variety of keto desserts.


Ingredients

Scale
  • 3 large eggs, separated
  • 1/4 cup erythritol (or other keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup almond flour
  • 1/4 teaspoon baking powder
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the egg whites until stiff peaks form.
  3. In another bowl, mix the egg yolks with erythritol, vanilla, and almond extract until creamy.
  4. Gently fold in the almond flour, baking powder, and salt into the egg yolk mixture.
  5. Carefully fold the beaten egg whites into the yolk mixture until just combined.
  6. Spoon the batter onto the prepared baking sheet in finger shapes.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool before serving.
