Ingredients

- 8 ounces cream cheese, softened
- 1/2 cup powdered erythritol
- 1/4 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon peppermint extract
- 1/4 cup dark chocolate, melted
- 2 tablespoons coconut oil, melted
Instructions
- In a mixing bowl, beat the softened cream cheese and erythritol together until smooth.
- Add the heavy whipping cream, vanilla extract, and peppermint extract. Mix until well combined.
- In a separate bowl, mix the cocoa powder and melted chocolate until smooth.
- Layer the chocolate mixture into silicone molds followed by the cheesecake mixture.
- Refrigerate for at least 2 hours or until set.
- Remove from molds and drizzle with melted coconut oil before serving.
Notes
- For a stronger mint flavor, increase the peppermint extract to taste.
- Store in the refrigerator for up to a week.
