Description

Deliciously decadent Keto Grasshopper Cheesecake Bites, perfect for a low-carb treat!


Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered erythritol
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon peppermint extract
  • 1/4 cup dark chocolate, melted
  • 2 tablespoons coconut oil, melted

Instructions

  1. In a mixing bowl, beat the softened cream cheese and erythritol together until smooth.
  2. Add the heavy whipping cream, vanilla extract, and peppermint extract. Mix until well combined.
  3. In a separate bowl, mix the cocoa powder and melted chocolate until smooth.
  4. Layer the chocolate mixture into silicone molds followed by the cheesecake mixture.
  5. Refrigerate for at least 2 hours or until set.
  6. Remove from molds and drizzle with melted coconut oil before serving.

Notes

  • For a stronger mint flavor, increase the peppermint extract to taste.
