Ingredients

  • 2 cups mixed nuts (almonds, walnuts, pecans)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup chia seeds
  • 1/4 cup coconut oil, melted
  • 1/4 cup sugar-free sweetener (erythritol or stevia)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine nuts, coconut flakes, and chia seeds.
  3. In another bowl, mix melted coconut oil, sweetener, vanilla extract, cinnamon, and salt.
  4. Pour the wet mixture over the dry ingredients and stir until well combined.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Let cool completely before breaking into clusters and storing in an airtight container.
