- 1 cup cottage cheese
- 2 cups almond flour
- 1/4 cup erythritol
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 eggs
- 1/4 cup unsweetened coconut flakes
- 1/2 teaspoon vanilla extract
- 2 tablespoons melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together cottage cheese, almond flour, erythritol, salt, and baking powder.
- Add eggs, coconut flakes, vanilla extract, and melted butter. Stir until combined.
- Shape the dough into rolls and place them on a baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
Notes
- For a sweeter roll, increase erythritol to 1/3 cup.
- Store leftovers in an airtight container for up to 3 days.
