A deliciously creamy and rich cheesecake infused with coffee, perfect for keto diets.


Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup cream cheese
  • 1 cup heavy cream
  • 1/2 cup erythritol
  • 2 large eggs
  • 1 tablespoon instant coffee
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix almond flour and cocoa powder.
  3. In another bowl, beat cream cheese until smooth, then add erythritol and mix.
  4. Add eggs, instant coffee, and vanilla extract, mixing until well combined.
  5. Fold in heavy cream gently.
  6. Pour the batter into a prepared springform pan.
  7. Bake for 45 minutes or until set.
  8. Cool and chill before serving.

Notes

  • For a stronger coffee flavor, increase the amount of instant coffee.
