- 4 ounces dark chocolate (80% cocoa)
- 2 tablespoons unsweetened cocoa powder
- 3 large eggs, separated
- ¼ cup powdered erythritol
- 1 teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 375°F (190°C).
- In a double boiler, melt the dark chocolate and butter together.
- In a bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- In another bowl, whisk the egg yolks with erythritol, cocoa powder, and vanilla extract.
- Combine the chocolate mixture with the yolk mixture.
- Gently fold the egg whites into the chocolate mixture.
- Pour the mixture into greased ramekins.
- Bake for 12-15 minutes until puffed.
- Serve immediately.
Notes
- For a richer flavor, use high-quality dark chocolate.
- Serve with whipped cream or a sprinkle of cocoa powder.
