- 1/2 cup sugar-free chocolate chips
- 1/2 cup unsalted butter
- 1/4 cup almond flour
- 1/4 cup cocoa powder
- 3 large eggs
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup peanut butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a microwave-safe bowl, melt the chocolate chips and butter together until smooth.
- In another bowl, whisk together the eggs, erythritol, and vanilla extract.
- Add the melted chocolate mixture to the egg mixture, stirring until combined.
- Fold in the almond flour, cocoa powder, and salt until well mixed.
- Grease ramekins and pour half of the chocolate batter into each ramekin.
- Drop a spoonful of peanut butter in the center, then cover with the remaining batter.
- Bake for 12-15 minutes until the edges are set but the center is still soft.
- Let cool for a minute, then invert onto plates and serve.
Notes
- Enjoy with whipped cream or berries for an extra treat.
