Ingredients

  • 1 pound chicken breast, sliced into strips
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame oil
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup coconut milk

Instructions

  1. In a bowl, mix together olive oil, soy sauce, peanut butter, lime juice, garlic, ginger, sesame oil, and cayenne pepper.
  2. Marinate the chicken strips in the mixture for at least 30 minutes.
  3. Preheat the grill or grill pan over medium heat.

  5. For the dipping sauce, combine remaining marinade with coconut milk in a small saucepan and heat until warmed.
