This Keto Cauliflower Fried Rice and Chicken is a healthy, low-carb alternative to traditional fried rice that is delicious and easy to make!

- 1 head cauliflower, grated
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 cup mixed bell peppers, diced
- 1 cup peas
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 eggs, beaten
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the garlic and sauté for 1 minute.
- Add the bell peppers and peas, cooking until tender.
- Push the mixture to one side of the skillet and pour the beaten eggs into the other side, scrambling until cooked.
- Add the grated cauliflower and mix well with the chicken and vegetables.
- Stir in soy sauce and sesame oil, mixing until combined.
- Top with chopped green onions before serving.
Notes
- For extra flavor, add ginger or your favorite spices.
- This dish can be made ahead and reheats well.
- Can substitute chicken with shrimp or tofu for different proteins.
