Description
A low-carb twist on traditional California rolls using cauliflower rice.
Ingredients
Scale
- 1 cup riced cauliflower
- 4 sheets nori (seaweed)
- 1/2 cup imitation crab meat
- 1/2 avocado, sliced
- 1/4 cup cucumber, julienned
- 2 tablespoons mayonnaise
- 1 tablespoon soy sauce or tamari
- 1 teaspoon sesame oil
- 1 tablespoon rice vinegar
Instructions
- In a bowl, combine riced cauliflower, mayonnaise, soy sauce, sesame oil, and rice vinegar.
- Lay a nori sheet shiny side down on a sushi mat.
- Spread a thin layer of the cauliflower mixture over the nori, leaving a border at the top.
- Layer imitation crab, avocado, and cucumber on top of the cauliflower mixture.
- Using the mat, roll the nori tightly away from you to form a roll.
- Use a sharp knife to slice the roll into bite-sized pieces.
- Repeat with remaining ingredients.
- Serve with additional soy sauce for dipping.
Notes
- For added flavor, sprinkle sesame seeds on the rolls before slicing.
- Make sure to press the rice firmly to hold the roll together.
