Description

These Keto Buffalo Chicken Taquitos are a delicious low-carb twist on a classic Mexican dish, packed with flavorful buffalo chicken and wrapped in a crispy tortilla.


Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 low-carb tortillas

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the shredded chicken, cream cheese, buffalo sauce, cheddar cheese, garlic powder, onion powder, salt, and pepper.
  3. Place a generous amount of the filling onto each low-carb tortilla and roll it up tightly.
  4. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until they are golden and crispy.
  6. Remove from the oven and let them cool slightly before serving.
