- 2 cups cottage cheese
- 1 cup fresh blueberries
- 4 large eggs
- 1/4 cup almond flour
- 1/4 cup erythritol or sweetener of choice
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, eggs, almond flour, erythritol, vanilla extract, baking powder, cinnamon, and salt until well combined.
- Gently fold in the blueberries.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let cool for a few minutes before slicing and serving.

- Can be stored in the refrigerator for up to 5 days.
- Great served warm or cold.
