Description

A delicious low-carb breakfast bake made with cottage cheese and fresh blueberries, perfect for a ketogenic diet.


Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup erythritol or sweetener of choice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, eggs, almond flour, erythritol, vanilla extract, baking powder, cinnamon, and salt until well combined.
  3. Gently fold in the blueberries.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the top is golden and set.
  6. Let cool for a few minutes before slicing and serving.
