- 1 cup almond flour
- 1/4 cup erythritol sweetener
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together almond flour, erythritol, baking powder, and salt.
- Add melted butter, egg, and vanilla extract to the dry ingredients. Mix until smooth.
- Fold in blueberries gently.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- Store in an airtight container in the fridge for up to a week.
- Substitute blueberries with raspberries for a different flavor.
