Deliciously creamy and satisfying, these Keto Blackberry Cheesecake Bars are the perfect low-carb dessert for any occasion, bursting with fresh blackberry flavor.


Ingredients

  • 1 ½ cups almond flour
  • ¼ cup sweetener (like erythritol)
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup sweetener (like erythritol)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup blackberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, mix almond flour and sweetener. Add melted butter and combine until crumbly.
  3. Press the mixture into the bottom of the baking dish to form the crust.
  4. In a large mixing bowl, beat together cream cheese and sweetener until smooth. Add the eggs one at a time, then mix in vanilla extract.
  5. Fold in blackberries gently.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Bake for 30-35 minutes until set in the center. Let cool and refrigerate for at least 2 hours before slicing.
