- 1 ½ cups almond flour
- ¼ cup sweetener (like erythritol)
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup sweetener (like erythritol)
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup blackberries
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, mix almond flour and sweetener. Add melted butter and combine until crumbly.
- Press the mixture into the bottom of the baking dish to form the crust.
- In a large mixing bowl, beat together cream cheese and sweetener until smooth. Add the eggs one at a time, then mix in vanilla extract.
- Fold in blackberries gently.
- Pour the cheesecake mixture over the crust in the baking dish.
- Bake for 30-35 minutes until set in the center. Let cool and refrigerate for at least 2 hours before slicing.
