Description

A hearty and flavorful Keto Beef Stew perfect for low-carb diets.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups cauliflower, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add beef cubes and brown on all sides.
  3. Add onion and garlic, sauté until softened.
  4. Pour in beef broth and add cauliflower, carrots, celery, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for at least 2 hours, until beef is tender.
  6. Serve hot and enjoy!
