Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups cauliflower, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, heat olive oil over medium-high heat.
- Add beef cubes and brown on all sides.
- Add onion and garlic, sauté until softened.
- Pour in beef broth and add cauliflower, carrots, celery, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for at least 2 hours, until beef is tender.
- Serve hot and enjoy!
Notes
- This stew can be made in a slow cooker for 6-8 hours on low.
- Feel free to substitute any low-carb vegetables you like.
