Ingredients

  • 1 pound beef chuck, cut into cubes
  • 1 cup pearled barley
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Stir in the onion, carrots, and celery and cook for 5 minutes.
  4. Add beef broth, barley, garlic powder, thyme, salt, and pepper.
