- 1 pound beef chuck, cut into cubes
- 1 cup pearled barley
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Stir in the onion, carrots, and celery and cook for 5 minutes.
- Add beef broth, barley, garlic powder, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Adjust seasoning if needed and serve hot.

- Feel free to add more vegetables like mushrooms or spinach for added nutrition.
- This soup can be refrigerated for up to 3 days.
