Description

A creamy and hearty keto-friendly soup that combines the flavors of a bacon cheeseburger into one delicious bowl.


Ingredients

  • 1 pound ground beef
  • 6 slices bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup chopped green onions (for garnish)

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.
  2. Add the ground beef to the pot and cook until browned. Drain excess fat if necessary.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the beef broth, heavy cream, and bring to a simmer.
  5. Add the Dijon mustard, paprika, Worcestershire sauce, black pepper, and salt.
  6. Simmer for about 10 minutes, stirring occasionally.
  7. Add the cheddar cheese and stir until melted and creamy.
  8. Top with diced tomatoes and crumbled bacon before serving. Garnish with chopped green onions.
