- 4 fillets salmon
- 1 cup almond flour
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together almond flour, parmesan, dill, lemon zest, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle olive oil over the salmon and then top with the almond mixture.
- Bake for 12-15 minutes, until the salmon is cooked through and the topping is golden brown.
- Drizzle with lemon juice before serving.
