Description

Delicious low-carb brownies with almond and coconut flavors reminiscent of the classic Almond Joy candy bar.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol or preferred sweetener
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup unsweetened almond butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
  3. Add almond butter, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Fold in the shredded coconut and chocolate chips.
  5. Pour the batter into a greased 8×8 inch baking pan and smooth the top.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before cutting into squares and serving.
