Delicious low-carb brownies with almond and coconut flavors reminiscent of the classic Almond Joy candy bar.
Ingredients

- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol or preferred sweetener
- 1/4 cup unsweetened shredded coconut
- 1/2 cup unsweetened almond butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
- Add almond butter, eggs, and vanilla extract to the dry ingredients and mix until well combined.
- Fold in the shredded coconut and chocolate chips.
- Pour the batter into a greased 8×8 inch baking pan and smooth the top.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- Store brownies in an airtight container for up to one week.
- For a richer flavor, you can add a sprinkle of sea salt on top before baking.
