Description
A delicious blend of spiced ground meat and fluffy veggie pilaf.
Ingredients

- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell pepper)
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine ground beef, cumin, coriander, paprika, garlic, onion, parsley, salt, and pepper. Mix well and shape into kebabs.
- Heat olive oil in a skillet over medium heat. Cook the kebabs until browned on all sides.
- In a separate pot, heat olive oil and sauté mixed vegetables until tender.
- Add rice to the vegetables and stir for a minute. Pour vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked.
- Serve kebabs over the rice pilaf.
Notes
- For a spicy kick, add red pepper flakes to the meat mixture.
- Leftover pilaf can be stored in the fridge for up to 3 days.
