Description

A delicious blend of spiced ground meat and fluffy veggie pilaf.


Ingredients

Scale
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, bell pepper)
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, cumin, coriander, paprika, garlic, onion, parsley, salt, and pepper. Mix well and shape into kebabs.
  2. Heat olive oil in a skillet over medium heat. Cook the kebabs until browned on all sides.
  3. In a separate pot, heat olive oil and sauté mixed vegetables until tender.
  4. Add rice to the vegetables and stir for a minute. Pour vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer until rice is cooked.
  6. Serve kebabs over the rice pilaf.

Notes

  • For a spicy kick, add red pepper flakes to the meat mixture.
  • Leftover pilaf can be stored in the fridge for up to 3 days.
