A delicious and easy Instant Pot recipe for Italian chicken with summer vegetables.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup cherry tomatoes
  • 1 medium zucchini, sliced
  • 1 medium bell pepper, chopped
  • 1/2 cup Italian dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place chicken in the Instant Pot.
  2. Add cherry tomatoes, zucchini, bell pepper, Italian dressing, garlic powder, Italian seasoning, salt, and pepper.
  3. Seal the lid and cook on high pressure for 10 minutes.
  4. Quick release the pressure, open the lid, and stir to combine.
  5. Serve warm.
