Description

This Instant Pot Keto Breakfast Casserole is a perfect low-carb dish that’s quick and easy to prepare, ideal for a filling breakfast.


Ingredients

  • 8 eggs
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup shredded cheese
  • 1 cup cooked bacon, chopped
  • 1 cup diced bell peppers
  • 1 cup cooked sausage, crumbled
  • 1/2 cup green onions, sliced

Instructions

  1. In a large mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
  2. Add in cheese, bacon, bell peppers, sausage, and green onions, mix until well combined.
  3. Transfer mixture to a greased 7-inch pan that fits in the Instant Pot.
  4. Add 1 cup of water to the Instant Pot, and place the trivet in the pot.
  5. Set the pan on the trivet, lock the lid, and cook on high pressure for 30 minutes.
  6. Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  7. Carefully remove the pan, let cool slightly, then slice and serve.
